Trivia: Masarap at masustansyang burger na walang karne

ISANG masustansya at masarap na meat alternative o extender ang banana peel o balat ng saging.

Tama, balat nga ng saging! Napakainam nitong gawing “meatless” na patty para sa burger steak, “meatballs” o lumpiang shanghai na vegetarian. Sinasabing mayaman sa phosphorous at may mga antioxidant at anti-microbial properties.

Kailangan lamang linising mabuti at pakuluan hangang lumambot upang mawala ang pakla nito.

Kapag naluto na at nahiwa ng maliliit ay maaring haluin kasama ng iba pang sangkap, bilugin para sa meatballs o patties. Maganda ang texture nito na parang karne.

Recipe:

Food1Banana Peel Bola-bola using Oyster Sauce

Makes 4 servings.

Ingredients

7 pcs Banana peels, yellow (10 cm x 6 cm), 250 g

washed thoroughly, boiled in:

3 cups Water 750 mL

1 pc Red onion, chopped 55 g

1 pc Egg, whole and beaten 60 g

2 cloves Garlic, chopped 10 g

1 sachet Mama Sita’s Oyster Sauce 30 g

2 tsp Mama Sita’s Liquid Seasoning 10 mL

1/2 tsp Fine Salt 3 g

1/4 tsp Ground black pepper

1/2 cup All-purpose flour 60 g

1 cup Cooking oil 250 mL

1/2 cup Japanese breadcrumbs 30 g

For ala pobre sauce:

2 Tbsp Butter, unsalted and softened 30 g

6 cloves Garlic, crushed 30 g

1 1/4 cup Water 310 g

1 pouch Mama Sita’s Oyster Sauce 60 g

1 tsp Mama Sita’s Liquid Seasoning 5 mL

1 tsp Brown sugar 4 g

1/8 tsp Fine salt

1/4 tsp Ground black pepper

1 Tbsp + 1 tsp Cornstarch, dissolved in: 10 g

1 Tbsp Water 15 mL

Food2Preparing banana peel patties:

1. Boil banana peels for 10 minutes. Coarsely chop the banana peels and squeeze out the excess liquid.

2. Transfer banana peels in a bowl, then combine all the main ingredients except for the Japanese breadcrumbs. Mix well.

3. Form into balls (approx. 28 g each) and coat with Japanese breadcrumbs. Set aside.

4. Prepare the sauce: sauté garlic in butter for 30 seconds in a small saucepan. Add the rest of the ingredients for the sauce. Bring to a boil and simmer until the sauce has thickened.

5. Heat 1/2 cup of cooking oil in a pan over medium heat. Fry the banana peel balls, fry for 2 minutes on each side until golden brown.

6. Serve hot and topped with sauce.

Note: you can also serve with bun, lettuce, tomato, onion, and cucumber (as in a typical burger), do not use banana peels from overripe bananas.
